Humphreys Peak at 12,633' is visible from much of the state. This is shot from south of Jerome, about 53 miles away but it was still clearly visible from Prescott, a distance of some 75 miles. (you may remember an even more distant shot of this peak from the Painted Desert in another photo set)

East of Phoenix on US 60 (to be more precise, between Florence Junction and Superior). The orange blossoms on the cactus at the left are really quite striking. We didn't see any at a convenient place to stop and get a closer up though.
